What Is Roasted-to-Order Coffee? A Roaster’s Guide

Roasted-to-order coffee means your coffee is roasted after you place your order rather than being roasted in large batches and stored until it sells.
At Sava Coffee Roasters, we roast our specialty coffee in small batches after an order is placed. We normally roast and ship within 24 hours, and every bag carries a handwritten roast date so you know exactly when your coffee was roasted.
For us, roasted-to-order coffee is about giving you more control over freshness while keeping the process simple: you choose the coffee, roast level, and grind, and we take care of the roasting.
Why Does the Roast Date Matter?
Coffee changes continuously after roasting.
During roasting, heat transforms green coffee beans and develops the aromas, sweetness, acidity, body, and other characteristics we associate with brewed coffee. After the roast is finished, those characteristics continue to evolve.
That is why we believe a roast date is more useful than simply knowing an expiration date.
At Sava, we generally consider approximately 5–14 days after roasting to be a good peak-flavor window for many of our coffees, although the ideal timing can vary depending on the coffee, roast level, and brewing method.
For the best experience, we recommend enjoying our coffee within about six weeks of the roast date.
Is Coffee Best Immediately After Roasting?
Not necessarily.
Freshly roasted coffee releases carbon dioxide after roasting, a process commonly called degassing. Depending on the coffee and brewing method, giving the beans some time to rest can produce a more balanced cup.
So when we talk about fresh coffee, we do not simply mean drinking it as quickly as possible after it leaves the roaster.
What matters is knowing when it was roasted and drinking it while its flavor is still expressive.
That is one reason every Sava bag has a handwritten roast date.
Roasted-to-Order vs. Regular Store-Bought Coffee
Traditional retail coffee can pass through several stages before reaching the customer.
Coffee may be roasted, packaged, warehoused, distributed to a retailer, stocked on a shelf, and then eventually purchased.
Roasted-to-order shortens that process.
Instead of roasting coffee first and waiting for someone to buy it, we wait for the order and then roast the coffee.
That means the roast date is connected directly to your purchase.
It also allows us to offer something else that is important to Sava: roast-level choice.
Can You Choose Your Roast Level?
For many of our coffees, yes.
Different roast levels can emphasize different characteristics in the same coffee.
A lighter roast may preserve more of a coffee’s acidity, floral qualities, fruit characteristics, and origin character. A more developed roast may emphasize sweetness, body, chocolate, caramelized flavors, and a rounder cup.
Neither approach is automatically better.
Coffee is personal, and we do not believe every customer should be forced into the same roast profile.
Our roasted-to-order model makes it possible for you to choose the coffee and roast level that better match how you like to drink it.
Why We Roast Coffee in Small Batches
We work with coffees from very different parts of the world, and we do not want to treat them as if they are all the same.
A natural-process coffee from Peru can behave differently during roasting from a washed Gesha grown in Laos or a traditional natural coffee from Yemen.
Origin, variety, processing method, bean density, moisture, and the flavors we want to highlight can all influence how we approach a roast.
Small-batch roasting gives us the flexibility to pay attention to those differences.
Our goal is not simply to make every coffee taste like “Sava coffee.” We want the characteristics that made us select a particular origin in the first place to remain recognizable in the cup.
Does Grind Matter Too?
Yes.
Once coffee is ground, much more surface area is exposed to air, so its aroma and flavor can change more quickly.
If you own a grinder, we generally recommend ordering whole beans and grinding them shortly before brewing.
But not everyone has a grinder at home.
That is why we also offer grind options. If you need your coffee ground, choosing the appropriate grind for your brewing method is more useful than buying whole beans you cannot properly prepare.
The goal is to make specialty coffee easier to enjoy, not more complicated.
